Lemongrass Mint Mojito

Bring out the refreshing show stopper for brunch or anytime you want to 'wow' your guests.   Ingredients 1 small Spring Mint 2" long Zest of Lime Peel 1 fl. oz Lemongrass Mint Balsamic 2 fl. oz Rum 2 fl. oz Club Soda Ice Cubes   Directions Muddle mint leaves, lime peel and lemon grass mint balsamic together in a shaker. Fill the shaker with ice cubes and add the rum - cover and shake well. Pour entire contents in a Collins glass and top up with club soda. Enjoy!   Serves 1.

For the Waffles (Makes 5-6 Waffles): 1 Cup All Purpose Flour 1 1/2 Teaspoons Baking Powder 1 1/2 Teaspoons Sugar 1 Pinch Salt 2 Eggs 2 Tablespoons Meyer Lemon Olive Oil  1 Teaspoon Grapefruit White Balsamic 3/4 Cup Milk Icing Sugar Fruits   Heat the waffle maker.
