Spinach Salad with Peach Balsamic and Walnut Oil
1/4 C Olivia's Ripe Peach Balsamic
1/2 C Olivia's Roasted French Walnut Oil
1 Tsp. Dijon Mustard
1.5 Tsp. Tahini
salt and pepper to taste
In a small bowl combine all above ingredients, whisk until all smooth, set aside to mingle.
The salad could include most anything, key ingredients would be baby spinach, toasted walnuts (or other nuts like almond, pecan or hazelnut) crispy fried prosciutto, boiled egg, sweet onion, tomato, sliced mushrooms, cucumber, red pepper, etc.
Drizzle dressing over salad immediately before serving, toss, add croutons and/or shaved parmesan cheese, adjust seasoning if required.
