Pineapple & Mandarin Chicken

Pineapple and Mandarin Chicken

Ingredients

6 Chicken Breasts, skinless and boneless

2 Tbsp. Honey
-
1 Tbsp. Garlic, minced

2 Tbsp. Olivia's Extra Virgin Olive Oil

1 Pineapple, cored and sliced

1 Mandarin Orange, sliced in 3/4 inch slices
Directions
To prepare the Marinade, mix together the honey, garlic, 1 Tbsp. EVOO, and Pineapple Balsamic
Slice the chicken breasts in to 2 inch thick slices, pierce with a fork for good marinade absorption.
Place the chicken portions in a large glass bowl and pour the marinade over the top. Refrigerate covered for 4 or 5 hours
Once the chicken is marinated, preheat grill to 375F, spray grill with remaining EVOO and cook for 5 to 7 minutes each side. Alternatively, could be done in oven, low broil, or stove top as well. Ensure completely cooked
Grill pineapple and orange as well, in your same cooking method, looking for a little caramelization, 2 to 3 minutes a side
Remove all from grill, serve with rice, or pasta of choice or place on top of a green salad or asian cabbage salad
