Ingredients
7 or 8 Medium to large Scallops
1 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Maple Syrup
3 Tbsp. Pomegranate Seed, cleaned and dried
1/4 Tsp Garlic, Minced
Salt and Pepper to taste
Directions
Wash and dry Scallops and set aside
Put EVOO and Maple Syrup in a skillet on Medium High to High until nicely sizzling
Add Scallops, Pomegranate seeds and Pomegranate Balsamic. The vinegar will start to caramelize with the oil/syrup fast so keep mixing the sauce with the seeds and scallops to form a glaze
Add Garlic and salt and pepper
Pan sear for 4 to 6 minutes ( or until done) on Medium High flipping once or twice, do not over cook
Remove from heat immediately, transfer to serving plates, and spoon sauce and seeds over each plate. Garnish with fresh black pepper
