Caesar Salad Dressing

Ingredients

1/4 C finely grated parmesan cheese, extra for garnish

Kosher salt and freshly ground Black Pepper

1 egg yolk

1 Tbsp. juice from 1 lemon or Olivia’s Sicilian Lemon Balsamic

4 anchovies
-
1 Tsp. Worcestershire sauce
Directions
Combine egg yolk, lemon juice or Olivia's Sicilian Lemon Balsamic, anchovies, Worcestershire sauce and 1/4 cup parmesan cheese in a blender jar or container of a food processor and pulse to combine.
With the processor running slowly drizzle in Olivia’s Garlic Infused Olive Oil until a smooth emulsion forms.
Season to taste, be generous with salt and pepper. Drizzle over a bowl of romaine lettuce, top with extra parmesan cheese and croutons and/or bacon bits or crispy fried prosciutto if desired
