Blueberry, Lemon & Thyme Sparkling Shrub
This recipe creates a shrub syrup to keep in the refrigerator throughout the summer.
Ingredients for the Syrup:
- 2 C Sicilian Lemon
- 1 C. fresh Blueberries - crushed
- 2” Sprig fresh Thyme
Instructions for the Shrub:
- In a one litre mason jar or container add the fresh botanical/fruit ingredients.
- Pour the balsamic over the fruit and allow to "infuse" for at least one hour or up to four hours in refrigeration. The longer it sits, the more pronounced the flavour of the fruit infusion.
- Strain and keep refrigerated and tightly covered for up to one month.
Make the Shrub:
- Put 1-2 oz. of infused syrup (shrub) into a glass over ice. How much depends on your preference for sweetness
- Add 8 oz. of chilled sparkling water, sparkling wine or club soda as you prefer.
