Strawberry & Apricot Balsamic Sparkling Shrub

  • 2 Cups Blenheim Apricot White Balsamic 
  • 1 C. fresh Strawberries - coarsely chopped and steeped 
  • Olivia's Strawberry Balsamic

Make the Infused Shrub Syrup:

  1. In a one litre mason jar or container add the fresh botanical/fruit ingredients. 
  2. Pour the balsamic over the fruit and allow to "infuse" for at least one hour or up to four hours in refrigeration. The longer it sits, the more pronounced the flavour of the fruit infusion. 
  3. Strain and keep refrigerated and tightly covered for up to one month.


Make the Shrub:

  1. Put 1-2 Tbsp. of infused syrup (shrub) into a glass. How much depends on your preference for sweetness
  2. Add 8 oz. of chilled sparkling water
  3. Serve over ice if desired
