Harissa Roasted Cashews

Another wonderful addition to a charcuterie platter or cheese plate.

The sweetness of cashews roasts beautifully with salt and Hot Harissa Infused Olive Oil.  This blend keeps a nice hit of spice after cooking.

Ingredients:

  • 1 bag of Cashews (roasted raw, salted or unsalted)
  • Sel de Mer
  • Hot Harissa to coat

Method:

  1. Preheat your oven to 300 F
  2. Place cashews in a bowl and drizzle with enough Hot Harissa Infused Olive Oil to coat the cashews but not so much that you create pools of oil in the bowl. 
  3. Spread the cashews into a single layer on a cookie sheet and then sprinkle with Sel de Mer even if you use salted cashews.
  4. Roast the cashews for about 30 minutes stirring every 5-10 minutes.  
  5. They are done when they are dark in colour and mostly dry.
  6. Allow to cool and store in an airtight container.
