This rub was created with poultry and fish in mind. We've taken a classic barbecue style rub, heavy on the paprika, black pepper and garlic powder, and lightened it with onion powder, lemon peel, sage and marjoram. The result is robust enough to season turkey legs or chicken but subtle and delicate enough for any catch of fish. Try it on salmon and top with sliced pears. It's delicious.
